Ramon Jane - Tinc Set 2023

Xarel-lo & Parellada bottled during the primary fermentation, you can think of it as pét-nat Cava although we're not allowed to call it that. Brut nature, totally dry. Clean, brisk, and generous, with bags of acidity. Flavours of brioche, pear, lemon, and some nuttiness. Its name means "I’m thirsty" in Catalan - not surprisingly it’s a real thirst quencher!
