Domaine La Calmette – Resurgences 2019

For Maya and Nicolas it's not about expressing a particular variety, but the place itself.  All the grapes are co-planted and co-fermented, the style paying tribute to rich and complex Alsatian field blends - Maya spent the earlier part of her career in Alsace where she consulted with some of the greats of natural/biodynamic winemaking.  

Everything is harvested together by hand, given a short maceration (just for texture, pressed off for a long and slow fermentation, and then transferred to large Alsatian tonneau for maturation.  Tiny sulphite addition, unfined, unfiltered.
